For lunch today I took some leftovers and threw together this tasty, quick and easy little dish. The kids and I really enjoyed it.
Cheesy Chicken Fiesta
1 can fiesta nacho cheese (Campbells)
1 can diced tomatoes and green chilies
2 c. cooked brown rice
1-2 c. cooked chicken, shredded or diced
tortilla chips
fresh cilantro
sour cream
Mix the cheese, toms, rice and chicken. Smooth into an 8x8 (?) dish. Top with chopped fresh cilantro, 1-3 Tbls. depending on taste. Crush a handful of two of tortilla chips on top of that. Bake in a 350 oven for 15-20 min. Top each serving with sour cream. Yum!
I also scooped out the rice mix as a dip with the chips.
Since it was thrown together you could play with the ingredients and amounts. I would guess it to serve 4-6 people as is.
