I'm not very good at making up my own recipes. I'd much rather just follow someone else's directions.
Yesterday I woke up sick and knew I wasn't going to feel like making dinner so I thought I'd just throw something in the crockpot. I didn't feel like going through all of my recipe books, so I just threw my own stuff together. To my (and I think everyone else's) surprise it turned out really good. All of the kids had seconds even.
Mom's (surprisingly good!) Crockpot Chicken
6-8 boneless, skinless chicken breasts
1 can 98% fat free cream of celery soup
1 cup Tuscan House Italian dressing (Kraft brand)
1 cup chicken broth
8 oz. fat free cream cheese, softened
Place the chicken in the crockpot. Mix the soup, dressing, and broth. Pour over the chicken. Cook over low for about 6 hours. Remove chicken, leaving all the sauce in the crockpot. Whisk the cream cheese into the sauce and place chicken back into crockpot. Cook on high for another 30 minutes. Serve over brown rice, noodles, or mashed potatoes.
I was thinking this might also be good if you cooked it a little longer and shredded the chicken. I'll try that next time. Let me know if you try it.
