Granola recipe

Okay family, here is the granola recipe I promised. You can find the original here along with lots of other yummy things. Here is the way I make it (and the way it was served at Grandpa's party). Be sure to check out the original though for variations.

Homemade Almond Granola

4 cups quick cooking oats
1 1/2 cup sliced almonds (or chop up whole almonds - I like having the different size chunks)
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 cup olive oil
1/2 cup honey
1 1/2 teaspoon vanilla
1 teaspoon almond extract

Directions: Preheat oven to 300 F. In a bowl mix the oats, almonds, salt and cinnamon. In a saucepan warm the oil and honey. Whisk in vanilla and almond. Carefully pour the liquid over the oat mixture. Stir gently with a wooden spoon. Spread granola on a cookie sheet. Bake 40 minutes. Let it cool completely. It will have hardened so now you can scrape it with a spoon. Seal granola in an airtight container or self-sealing plastic bag. Store at room temperature for 1 week or in the freezer for 3 months.
Usually I double this recipe. I bake half at a time in my Pampered Chef stoneware cookie sheet pan (love that thing!).
