This is amazing to me really. We planted a garden. Stuff grew. Amazing.
Now, what to do with it? We're going to be eating a lot of salad, I guess.
So, this bunch of greens is bok choy, spinich, buttercrunch lettuce and romaine lettuce.
Tonight we had Asian Chicken Noodle Salad. It's a recipe I got off of http://www.allrecipes.com/ and altered. Absolutely delish!
Here, I'll share.
2 (3 oz.) packages ramen noodles (discard seasoning packet), crushed
4 T. butter, melted
3/4 c. sunflower seeds
3/4 c. chopped almonds
6 c. shredded bok choy
2 c. diced, cooked chicken
24 sugar snap or snow pea pods
dressing:
1/2 c. canola oil
1/4 c. rice vinegar
1 T. soy sauce
1 T. lemon juice
1/4 c. sugar
Preheat oven to 350. Mix together the noodles, seeds, nuts and butter. Spread the mixture in a thin layer on a baking sheet. Bake for 10 minutes, stirring occasionally, until evenly toasted. Remove from heat and cool slightly.
In a large bowl, toss together the noodle mixture, bok choy, chicken and peas.
Prepare the dressing and pour over the salad. Toss evenly to coat. Serve immediately.
Tonight I actually mixed spinich and bok choy. Yummy. If you want the original recipe, go here.

yum... Alien Juice is pretty awesome too, and it will use up your spinach!
Wow, amazing! Love your veggies...and your recipe. But what happened to your dandelion weeds from the counter-top picture? Did you eat them too?
