Sweet Potato Bisquits

Stay with me here. I know it sounds kinda like a yeah, like I'd ever make that kind of recipe, but really they're AMAZING!


I don't really like sweet potatoes but we've been getting them in our box of organic veggies, so I had to do something with them. My girlfriend had made these so I reluctantly tried them. Then I begged for the recipe. She had gotten it from a mutual friend of ours. Kinda reminds me of that song...I heard it from a friend who-o, heard it from a friend who-o, heard it from another you've been messin' arou-ound. Except without the messin' around part.




Sweet Potato Bisquits
(from Robin who got it from Joyce)


2 3/4 c. flour
4 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 c. mashed sweet potatoes
3/4 c. sugar
1/2 c. butter
1 tsp. vanilla

Combine all the dry ingredients in a large bowl. Combine the remaining ingredients in different bowl. Add wet mixture to dry mixture. Kneed on floured surface. Roll out to 1/2" thickness. Use a biscuit cutter, or just a glass, whatever makes you happy. Bake at 425 for 12-15 min. Makes about 2 dozen.

My kids seriously celebrate when I make these. Now go cause a celebration in your own home.

Updated: Apparently I was considering sugar a wet ingredient - add it with the 'remaining' ingredients instead of the dry.
These bisquits freeze wonderfully.
You can use whole wheat flour too.
